I somehow love the month of Ramadan... the weather is beautifully filled with calming energy from all the prayers around. The sun feels brighter... as if God is wide awake, looking down at each and everyone of us. It feels as if the entire nation is soaking in the prayers...

.... and amidst this blessed month, my beloved family decides to visit us! 

So on a lazy Friday morning, my little Sister, Vish [btw, not so little any more ;)...] decided to make a Chilly Date Breakfast.... and with the first bit, I knew I had to share it with all of you!!!

Trust me, the dish was empty in minutes! The kids licked the plate clean!

So here you go.... Straight from Vish's Kitchen...

Chilly Date Spread Salmon Palmiers  

Smoked Salmon with Sesame,

Nigella Seeds Palmiers &

Chilly Date Spread

 

Ingredients:

• 320 g sheet puff pastry

• 1 tbsp sesame seeds

• 1 tsp nigella seeds

 

• 120 g smoked salmon

• 4 tbs cream cheese

•40 g your favourite Chilly Date Spread

Method:

  • Brush one side of the puff pastry with beaten egg and sprinkle sesame seeds and nigella seeds. Flip it around.
  • Make a mixture of cream cheese and Chilly Date. Spread it over the puff pastry.
  • Place the salmon slices parallel to each other.

  • Mark the center of pastry and tightly roll to the center of the pastry. Roll the other half similarly.
  • Cut the roll into 1 cm thick slices. (you can bake immediately or you can refrigerate/freeze it for later use)
  • Bake in preheated oven at 200℃/180℃ fan/gas 6 for 20-25 minutes with the cut side up. In case you are using a refrigerated roll, bake for an extra 5 minutes. Bake till it is puffed up and golden brown.
  • Remove and cool on a wire rack before packing.

  • Date seeds comprise up to 15% of the date fruit’s weight.
  • The seeds contain a higher content of protein and fat compared to date flesh.
  • High content of dietary fiber and phenolics in date seeds makes them good ingredient for functional foods.
  • Utilization of date seed in animal feed improves weight gain and feed efficiency.
  • Date seeds can even be incorporated into necklaces.
  • They can also be used as a source of oil.
  • The seeds contain 6 to 8% of yellow-green, non-drying oil suitable for use in soap and cosmetic products.
  • Seeds are burned to make charcoal for silversmiths.

Spiced date pumpkin salad
INGREDIENTS

250gms of Pumpkin cubes
1 Tbs of basil date spread whisked with lemon juice
200gms Feta cheese cubes
1 tablespoon black sesame seeds
1 cucumber - thinly sliced
1 carrot - thinly sliced
1 lemon - juiced
2 cups of Lettuce gently torn
Salt to taste
Black pepper powder to taste

PROCEDURE

Add pumpkin cubes, basil date spread, black pepper powder and salt in the oven tray. Mix all ingredients well.

Place the tray in a 15-minute pre-heated oven at 180-Degree Celsius for 30 minutes, until the pumpkin cubes golden brown colour.

Let the Pumpkin cubes rest for 30 minutes so they cool down and mix the salad with the rest of the ingredients. Add Salt and pepper to taste and black sesame seeds to garnish. Add a dash of soy sauce for extra flavour.

  • 30ml Chilly Date - Spiced Date Syrup
  • 30ml Gin
  • 20ml Fresh lemon juice
  • Tonic water
  • Ice Cubes
  • Garnish - Cucumber stick, Fresh mint leaves, Cinnamon stick

PROCEDURE

To your Cocktail shaker, add Chilly date - Spiced Date Syrup, Gin and Lemon Juice.

  • Shake well.

  • Pour the ingredients to your cocktail glass, add Tonic water and Ice cube.... and garnish!

  • 50gms of Zero Café, Coffee Alternative
  • 100ml hot water (96 Degree Celsius)
  • Hot Milk (65 Degree Celsius) to taste

PROCEDURE

  • Remove the strainer from the French Press and add Chilly Date - Zero Café, Coffee Alternative to the empty container.
  • Top it with hot water and let it brew for 3-4 minutes so the chocolaty, nutty, aromatic flavours from Zero Café are extracted.
  • Now insert the strainer into the French Press and slide it down so the powder is separated from the decoction.... and Wallah! Your Zero Café, Coffee Alternative is ready to brighten up your healthy morning :D
  • You can have your coffee black or with hot milk and sugar.

Wasabi Shrimps

INGREDIENTS

6 Jumbo Shrimps
50gms (2 tablespoons) of Wasabi Date Spread
1 teaspoon of dijon mustard
1 teaspoon of black pepper powder
Salt to flavour

PROCEDURE
Mix all the ingredients together and leave the shrimps to marinate overnight.

Pan cook
Add butter or oil to the pan and cook the shrimps in the open pan for 4 minutes or just until the shrimp curl up and change colour to bright orange.
Put the cooked shrimps on the skewer and they are ready to be served!

Grill
Put marinated shrimps on the skewers.
brush butter on the shrimps and place them on a hot grill. Let them cook for 3-4 minutes on one side. Then butter and turn them. Allow them to cook for another 2-3 minutes, just until the shrimp curl up and change colour to bright orange.
The Shrimps are ready to be served!
